I assume this is meant somewhat as a joke. But to be serious for just a moment (as someone with cowboy roots and relatives), the two main characters would qualify under the general usage of the term, which denotes a type of Western, livestock-centered lifestyle, and is as much about attitude as it is about cattle. Plus the Jake Gyllanhal (sp?) character is specifically a cowboy: he competes in rodeo events, which is a normal secondary definition of the word unrelated to whether one raises cattle. His wife in the movie is a cowgirl, since she does barrel racing, an activity that involves no cattle whatsoever.
